Bauernschueblig, a specialty of Northeastern Switzerland, is a smoked raw sausage. It's said to be the oldest variety of Schüblig, with recipes passed down orally in farming families. Our local butcher, Ochsen Schönengrund, has used these traditional recipes to create an enticing pure alpaca Bauernschueblig.
The traditional Bauernschueblig requires pork fat in the finishing process to give it flavor and texture, but the experience of the Ochsen Schönengrund and their willingness to create a new dry sausage allowed us to achieve our goal of producing a pure alpaca dry sausage. This gives the connoisseur the full taste of smoked alpaca meat and retains the nutrient-rich properties.
Alpaca meat is lean and high in protein, making it a nutritious and satisfying snack. Additionally, it contains low fat and cholesterol, making it a healthier alternative to other dried meats such as beef or pork jerky. Alpaca jerky has long been enjoyed as a staple food in the Andean regions of South America, where alpacas have been bred for centuries. Overall, alpaca jerky is a flavorful and nutritious snack with a rich cultural heritage.
The alpaca Bauernschueblig has a chewy texture and an intense flavor with a rich umami taste derived from the natural proteins and spices used in the marinade and smoking process. Through the drying process, the flavors of the meat are concentrated, and the smoke imparts a hearty taste to it.
Alpaca Bauernschüblig pairs well with a shot of Appenzeller schnapps or robust local red wine and can be eaten whole as a snack or served sliced with bread as an appetizer. It can also be served in various appetizer combinations and works wonderfully as a pizza topping (a favorite of our children).
